Barley Flour Recipe
In this culinary Wednesday post I used the recipe on the back of a barley flour package. I substituted, omitted, and added some ingredients in this recipe.
Prep Time: 30 mins Yieild: 12 - 15 muffins Cooking Time: 12 - 15 mins
1 Cup Barley flour
1 Cup Wheat Flour or All purpose flour
1 Tbsp Baking powder
1/2 tsp Salt
2 Tbsp Cinnamon
2 Eggs or 1/2 cup Liquid egg substitute
1/4 Cup Vegetable oil
1 tsp Extract (I used lemon extract)
1/2 Cup Honey
3/4 Cup Buttermilk (I used regular cow's milk)
1/2 Cup raisins ( optional)
Notes: I left out the raisins and added 1/4 cup molasses.
Medium mixing bowl, wooden spoon,measuring cups, measuring spoons, muffin tins, muffin cups (optional), cooling rack.
Preheat oven to 375F degrees. Mix all dry ingredients together. In separate bowl mix all liquid ingredients well. Combine both mixtures, being careful not to over mix. Add raisins (optional). Fill oiled muffin cups (optional) 3/4 full and bake for 12 - 15 minutes or until done.
